Simon, Joe, and I had a great celebration of the Epiphany on Monday,,, It was the Day of the 3 Kings, when the 3 Kings came to visit Jesus and give him gifts. We had ham, a rice with pink beans, and sautéed spinach. Even Simon got to eat a little ham...but Mom will be making more Doggie Treats out of healthy vegetables and fruits for the New Year!
